Baked Alaska Ali Babas

Ingredients

Babas:

  • 3 tablespoons chopped currants, dried or dark raisins
  • 3 tablespoons chopped dried cherries or cranberries
  • 3 tablespoons chopped dried apricots
  • 3 tablespoons hot water
  • 3 tablespoons dark rum
  • 1 teaspoon active dry yeast
  • 3 tablespoons warm water (105 to 115 degrees F)
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3 eggs, lightly beaten
  • 8 tablespoons unsalted butter, softened, cut into 6 pieces

Rum Soaking Syrup:

  • 3/4 cup water
  • 1 cup sugar
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup dark rum
  • leftover liquid from the dried fruit marinade (above)

Meringued Ice Cream:

  • 2 1/2 cups vanilla bean ice cream
  • 4 egg whites (about 1/2 cup)
  • 3/4 cup sugar
  • 4 teaspoons water
  • 1/4 teaspoon cream of tartar
  • Sliced fresh fruit or berries and dried cherries, for garnish
