Ziti Baked With Shrimp & Feta Cheese - Greek Style

Ingredients

  • 2 Tbsp olive oil plus enough for coating your baking dish
  • 1 onion, sliced thin
  • 2 large cloves garlic, sliced thin
  • 3 cups drained chopped canned plum tomatoes
  • 2 tsp minced fresh oregano, or 1 tsp dried & crumbled
  • 1/2 tsp dried red pepper flakes
  • salt & freshly ground pepper to taste
  • 2 Tbsp minced fresh basil ( I need a dry substitute)
  • 1 lb large shrimp, shelled & deveined
  • 1/4 cup minced fresh parsley leaves
  • 3/4 lb ziti, cooked & drained according to package directions
  • 1/2 lb feta cheese, crumbled
