Ingredients

For the filling:

  • 4 tablespoons (1/2 stick) unsalted butter
  • 3 pounds mixed apples, peeled, cored, and cut into 1/8-inch thick slices
  • 1 vanilla bean, halved lengthwise
  • 1 lemon, zested
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup sugar, or more, to taste

For the crust:

  • 8 to 10 slices firm white bread, crusts removed
  • 6 tablespoons (3/4 stick) unsalted butter, clarified
