  • 3/4 cup heavy cream
  • 1 1/2 cups grated Gruyere or crumbled Maytag Bleu cheese
  • 1 large onion, thinly sliced
  • 1 tablespoon sugar
  • Olive oil, for drizzling
  • Kosher salt, for sprinkling
  • Mixed greens, for serving
