Soft-Shell Crabs with Farro Salad

Ingredients

  1. 1/2 cup unsweetened pineapple juice
  2. 2 fresh hot red chiles, seeded and minced
  3. 1 tablespoon plus 1 1/2 teaspoons minced fresh ginger
  4. 2 tablespoons chopped cilantro
  5. 2 tablespoons thick coconut cream, spooned from the top of a chilled can of unsweetened coconut milk
  6. 1/4 cup olive oil
  7. 4 jumbo soft-shell crabs (about 3 ounces each)
  8. 1 cup farro
  9. 1/2 cucumber--peeled, seeded and finely diced
  10. 1/2 red bell pepper, finely diced
  11. 1 Hass avocado, finely diced
  12. 6 slices smoked bacon
  13. 5 tablespoons fresh lime juice
  14. 2 tablespoons chopped basil
  15. Salt and freshly ground pepper
  16. Four 1 1/2-inch-thick slices red or yellow watermelon, peeled
  17. Turbinado or granulated brown sugar
  18. 1 teaspoon unsalted butter
  19. 2 tablespoons vegetable oil
