Ingredients

  1. 1/2 lemon
  2. 4 artichokes (about 8 ounces each)
  3. 1 cup plus 2 tablespoons heavy cream
  4. 3 large eggs, at room temperature, beaten
  5. Kosher salt and freshly ground white pepper
  6. Boiling water
  7. 3/4 cup frozen fava beans
  8. 1/4 cup extra-virgin olive oil
  9. 1 garlic clove, minced
  10. 1/2 teaspoon chopped sage
  11. 1/2 teaspoon chopped rosemary
  12. 1 tomato—peeled, seeded and chopped
