  2. 2 1/2 cups whole milk
  3. 1 cup heavy cream
  4. 1/2 vanilla bean, split, seeds scraped
  5. 3/4 cup sugar

POACHED RHUBARB

  1. 3 cups water
  2. 2 cups sugar
  3. 1 cup dry red wine or rosé
  4. 2 tablespoons fresh lemon juice
  5. 1 cinnamon stick
  6. 1/2 vanilla bean, split, seeds scraped
  7. 1 pound rhubarb, cut into 1-inch lengths
  8. Small mint leaves, for garnish
