Ingredients

  1. 1 pound brioche, cut into 1-inch pieces (12 cups)
  2. 5 tablespoons unsalted butter
  3. 2 large Granny Smith apples—peeled, cored and cut into 1/2-inch pieces
  4. 1 cup sugar
  5. 1/2 teaspoon cinnamon
  6. 1/4 cup Calvados or other brandy
  7. 4 large eggs, beaten
  8. 3 cups milk
  9. 1 vanilla bean, split and seeds scraped
  10. Whipped cream or crème fraîche, for serving
