Warm Peach Shortcake with Brandy Whipped Cream

Ingredients

SHORTCAKE

  1. Vegetable spray
  2. 1/2 cup plus 1 tablespoon sugar

  9. 1 stick (4 ounces) cold unsalted butter, cut into 1/2-inch pieces, plus 1 tablespoon unsalted butter, melted
  10. 3/4 cup buttermilk
  11. 2 large eggs, beaten

FILLING

  1. 3 tablespoons brandy
  2. 1/4 cup golden raisins
  3. 3 tablespoons unsalted butter
  4. 4 firm, ripe peaches—halved, pitted and sliced 1/2 inch thick
  5. 1/2 cup packed light brown sugar
  6. 1/4 teaspoon ground cinnamon
  7. 1 cup heavy cream
