Grandma Zerr's Apricot Kuchen

Ingredients

DOUGH

  1. 1 1/4cups whole milk
  2. 1envelope active dry yeast
  3. 1large egg
  4. 4cups all-purpose flour, plus more for rolling
  5. 1/3 cup sugar
  6. 1teaspoon salt
  7. 1 1/2sticks (6 ounces) unsalted butter, softened

PASTRY CREAM

  1. 1/4 cup all-purpose flour
  2. 1/2 cup sugar
  3. 1 1/2cups whole milk
  4. 2large eggs
  5. 1teaspoon pure vanilla extract
  6. 1pound plump dried Turkish apricots—soaked in boiling water for 1 hour, drained and patted dry (see Note)

FROSTING

  1. 3/4 cup sugar
  2. 3tablespoons all-purpose flour
  3. 3tablespoons unsalted butter, softened
  4. Pinch of cinnamon
