Umbrian Apple-Walnut Roll-Ups

Ingredients

  1. 1/4 cup extra-virgin olive oil
  2. 2tablespoons dry white wine
  3. 2cups all-purpose flour
  4. 1/4 cup sugar
  5. Pinch of salt
  6. 4large egg yolks
  7. 4tablespoons cold, unsalted butter, cut into small pieces
  8. 2medium-firm, tart-sweet apples such as Staymans, Winesaps or Granny Smiths—peeled, cored and coarsely chopped (2 cups)
  9. 1cup coarsely chopped walnuts
  10. 1/4cup sugar
  11. 1/2cup golden raisins
  12. 1/4cup pine nuts
  13. 1teaspoon cinnamon
  14. 2tablespoons anisette or Sambuca
  15. 1large egg, beaten
