Ingredients

CAKE

  1. 1 1/2 cups almond flour (see Note)
  2. 1/4 cup all-purpose flour
  3. 1 teaspoon finely grated orange zest
  4. Salt
  5. 1 cup sugar
  6. 2 large eggs, beaten
  7. 6 large egg whites

PEARS

  1. 3 tablespoons unsalted butter
  2. 3 tablespoons sugar
  3. 4 ripe but firm Bartlett pears—peeled, cored and cut into 1/2-inch wedges
  4. Confectioners’ sugar, for dusting
  5. Crème Anglaise, for serving
