Ingredients

  1. 3 medium artichokes
  2. 1/2 lemon
  3. 1/4 cup plus 1 tablespoon extra-virgin olive oil
  4. 2 tablespoons minced shallots
  5. 2 tablespoons sherry vinegar
  6. 2 teaspoons finely grated orange zest
  7. 1 teaspoon chopped thyme
  8. 1/2 teaspoon Dijon mustard
  9. Salt and freshly ground pepper
  10. 3/4 pound chicken livers, trimmed
  11. All-purpose flour, for dusting
  12. 4 cups mâche or baby spinach (1/4 pound)
