Indian-Style Grilled Vegetables with Paneer

Ingredients

MARINADE

  1. 1 tablespoon cumin seeds
  2. 1/4 cup tomato juice
  3. 1/4 cup coarsely chopped cilantro
  4. 2 tablespoons hot pepper sauce
  5. 2 tablespoons red wine vinegar
  6. 2 tablespoons finely chopped ginger
  7. 1 1/2 tablespoons sugar
  8. 1 tablespoon minced garlic
  9. 1 tablespoon Dijon mustard
  10. 1 1/2 teaspoons salt

VEGETABLES WITH PANEER

  1. 4 large yellow cherry tomatoes
  2. 8 large snowpeas
  3. 8 large shiitake mushrooms, stemmed
  4. 1 medium zucchini, cut on the diagonal 1/2 inch thick
  5. 1 small Spanish onion, quartered lengthwise and layers separated
  6. 1 red bell pepper, cored and quartered lengthwise
  7. 1 green bell pepper, cored and quartered lengthwise
  8. 1 large russet potato
  9. 1/2 small butternut squash, peeled and cut into 1 1/2-inch chunks
  10. 4 large broccoli florets
  11. 4 large cauliflower florets
  12. Homemade Paneer with Indian Flavors or feta cheese, cut into 1 1/2-inch chunks
  13. Salt and freshly ground pepper
