Ingredients

TART SHELL

  2. Pinch of salt
  3. 1 stick (4 ounces) unsalted butter, cut into small pieces
  4. 1 large egg, beaten
  5. 3 tablespoons ice water

FILLING

  1. 1/2 pound medium asparagus, trimmed
  2. 4 large eggs
  3. 1 cup milk
  4. 2 tablespoons unsalted butter, melted
  5. 1/2 teaspoon salt
  6. 1/2 cup freshly grated Parmigiano-Reggiano cheese (1 1/2 ounces)
