  3. 2 teaspoons chopped chives
  4. 1 teaspoon chopped tarragon
  5. 1 teaspoon finely grated lemon zest
  6. 1 teaspoon fresh lemon juice
  7. Kosher salt and freshly ground pepper
  8. 2 pounds medium asparagus, tough ends discarded, tips reserved and stalks coarsely chopped
  9. 2 tablespoons unsalted butter
  10. 1 medium onion, finely chopped
  11. 1 quart chicken stock
  12. 2 cups water
