Toasted Goat Cheese with Mesclun

Ingredients

  1. 2 teaspoons fresh lemon juice
  2. 2 teaspoons malt vinegar
  3. 1 teaspoon finely chopped fresh basil
  4. 1/2 teaspoon minced garlic
  5. 2 tablespoons finely chopped fresh flat-leaf parsley
  6. Salt and freshly ground pepper
  7. 1/4 cup extra-virgin olive oil
  8. 1/4 cup plus 2 tablespoons homemade dry bread crumbs
  9. 1 1/2 teaspoons finely chopped mixed fresh herbs, such as thyme, rosemary and dill
  10. 2 tablespoons unsalted butter-- 1 tablespoon melted
  11. One 11-ounce log of fresh goat cheese, cut crosswise into 6 disks and chilled
  12. 1/2 pound mesclun mix
