Ingredients

  1. 1/4 cup unseasoned rice vinegar
  2. 3 tablespoons white (shiro) miso
  3. 1 tablespoon mayonnaise
  4. 1 tablespoon fresh lemon juice
  5. 1 teaspoon finely grated fresh ginger
  6. Pinch of sugar
  7. 3/4 cup grapeseed or vegetable oil
  8. Salt and freshly ground pepper
  9. 1/2 small green cabbage, shredded (4 cups)
  10. 1/2 small red cabbage, shredded (4 cups)
  11. 4 medium carrots, shredded
  12. 4 radishes, shredded
  13. 3 large scallions, white and light green parts only, julienned
