Arugula Salad with Grilled Mushrooms and Goat Cheese

Ingredients

  1. 1/2 cup dry white vermouth
  2. 1/2 cup extra-virgin olive oil
  3. Salt and freshly ground black pepper
  4. 1 pound mixed mushrooms—oyster, shiitake, portobello and cremini
  5. 1 tablespoon white wine vinegar
  6. 1 tablespoon very finely chopped shallot
  7. 4 ounces baby arugula
  8. 1/4 cup coarsely chopped walnuts
  9. 1 1/2 ounces fresh goat cheese, crumbled (scant 1/4 cup)
