Arugula Salad with Candied Walnuts

Ingredients

  1. 1 tablespoon sherry vinegar
  2. 1 teaspoon minced shallot
  3. 2 tablespoons extra-virgin olive oil
  4. 1 1/2 teaspoons walnut oil
  5. Salt and freshly ground pepper
  6. 2 bunches arugula, trimmed
  7. 1/2 cup candied walnuts (about 3 ounces)
  8. 1 medium Bartlett pear--halved, cored and thinly sliced
  9. 1/2 cup crumbled Maytag blue cheese
