Ingredients

  1. 1 cup quinoa (about 7 ounces)
  2. 2 cups water
  3. Salt
  4. 1/4 cup vegetable oil
  5. 2 tablespoons fresh lime juice
  6. 3/4 cup finely diced bell peppers, preferably a mix of green, red and yellow
  7. 1/2 medium cucumber-peeled, seeded and finely diced
  8. 2 tablespoons finely chopped mint
  9. 1 tablespoon minced jalapeo
  10. 1 scallion, minced
  11. Freshly ground pepper
