Ingredients

GNOCCHI

  1. 1pound small taro roots (about 5), scrubbed
  2. 2cups all-purpose flour, plus more for dusting
  3. 1extra-large egg
  4. 3tablespoons unsalted butter, melted
  5. 3tablespoons extra-virgin olive oil
  6. 1tablespoon kosher salt

SHREDDED PORK SAUCE

  1. 2tablespoons unsalted butter
  2. 2tablespoons extra-virgin olive oil
  3. 3/4pound roasted pork, pulled into large shreds
  4. 1shallot, minced
  5. 2large garlic cloves, minced
  6. 2green Thai chiles, thinly sliced
  7. 1/2tablespoon tomato paste
  8. 1 1/2pounds tomatoes—peeled, seeded and coarsely chopped
  9. Salt and freshly ground pepper
  10. 1cup chicken stock or broth
  11. 1long red chile, seeded and cut into long thin strips
  12. 2scallions, thinly sliced
  13. 2tablespoons coarsely chopped mint
  14. 2tablespoons coarsely chopped basil
