Rosemary Lamb Chops

Ingredients

  1. 1/4cup extra-virgin olive oil
  2. 4scallions, thinly sliced
  3. 1cup frozen baby peas
  4. 1cup frozen baby lima beans
  5. 1small zucchini, cut into 1/2-inch dice
  6. 1/4teaspoon crushed red pepper
  7. Salt and freshly ground black pepper
  8. 6romaine leaves, cut crosswise into 1/4-inch ribbons
  9. 1/4cup shredded mint leaves
  10. 12baby lamb rib chops (about 2 1/2 pounds), bones frenched (see Note)
  11. 1tablespoon minced rosemary
