Baked Rice and Beans with White Veal Sausage

Ingredients

  1. 3/4 cup dried white navy beans (5 ounces), soaked overnight and drained
  2. 1 carrot
  3. 1 celery rib
  4. 1 small onion, peeled, plus 1 medium onion, finely chopped
  5. 1 pound slab bacon
  6. 4 whole cloves
  7. 5 thyme sprigs
  8. 1 teaspoon whole black peppercorns
  9. 8 cups water
  10. 1 1/4 pounds white veal sausages, such as bockwurst
  11. 7 tablespoons unsalted butter, 4 tablespoons melted
  12. 2 large garlic cloves, minced
  13. 2 bay leaves
  14. 1 cup carnaroli or arborio rice (7 ounces)
  15. 1 cup heavy cream
  16. Salt and freshly ground white pepper
  17. 1 1/2 cups panko (Japanese bread crumbs)
