Ingredients

  1. 1 quart 1/2-inch cubes good-quality white bread
  2. 9 tablespoons olive oil
  3. Salt
  4. Fresh-ground black pepper
  5. 2 tablespoons red- or white-wine vinegar
  6. 1 1/4 pounds watercress, tough stems removed (about 3 1/2 quarts)
  7. 1/4 pound sliced salami, halved and cut crosswise into thin strips
  8. 6 ounces mild goat cheese
