- 3/4 pound boneless pork, preferably shoulder or butt, thinly sliced across the grain

- 3 tablespoons finely slivered fresh ginger
- 1 small green bell pepper, cut into matchsticks
- 4 shiso leaves, thinly sliced crosswise (optional)
- 2 scallions, cut into matchsticks
- 1 cup mung bean sprouts
