Ingredients

  1. 2 pounds beef tenderloin, sliced 1/4 inch thick and cut into 1/4-inch-wide strips
  2. 1 teaspoon freshly ground pepper
  3. 1 teaspoon ground cumin
  4. 1/4 cup soy sauce
  5. 2 tablespoons corn oil
  6. 3 large garlic cloves, finely chopped
  7. 2 medium red onions, halved lengthwise and sliced crosswise 1/2 inch thick
  8. 4 jalapeos, seeded and thinly sliced
  9. 1 1/2 pounds plum tomatoeshalved, seeded and cut into eighths
  10. 1/4 cup dry red wine
  11. 1/4 cup beef stock or low-sodium broth
  12. 2 tablespoons chopped cilantro
