Ingredients

  3. Salt
  4. 4 tablespoons plus 2 teaspoons unsalted butter
  5. 1 garlic clove, minced
  6. 1 pound sliced cremini or oyster mushrooms
  7. Freshly ground pepper
  8. 8 medium scallions or ramps, cut into 2-inch lengths
  9. 1/2 cup dry white wine
  10. 1/2 cup vegetable stock, fish stock or low-sodium broth
  11. 1/4 cup heavy cream
