Ingredients

  2. 18 large pitted prunes
  3. 10 garlic cloves, 6 peeled, 4 minced
  4. 2 teaspoons caraway seeds, crushed
  5. Kosher salt
  6. One 6 1/2-pound pork loin roast on the bone, rack of rib bones removed in one piece and reserved
  7. Freshly ground pepper
  8. 6 cups water
  9. 1 tablespoon unsalted butter
  10. 3 tablespoons all-purpose flour
