  8. Salt and freshly ground pepper
  9. 1/2 cup red wine
  10. One 28-ounce can Italian plum tomatoes, crushed with their liquid
  11. 1/4 teaspoon fennel seeds
  12. 1 1/2 cups fresh whole-milk ricotta
  13. 1/4 cup milk
  14. 1 teaspoon minced marjoram
  15. 1 pound rigatoni
