Ingredients

  1. 1/4 cup plus 2 tablespoons extra-virgin olive oil
  2. 1 large Spanish onion, cut into 1/2-inch dice
  3. 4 garlic cloves, minced
  4. 1/4 pound smoked ham or prosciutto, sliced 1/4 inch thick
  5. 2 pounds tomatoes, cut into 1/2-inch dice
  6. 1/2 cup dry white wine
  7. 1/2 cup brandy
  8. 2 pounds zucchini, cut into 1/2-inch dice
  9. One 1 1/2-pound eggplant, cut into 1/2-inch dice
  10. 1 medium red bell pepper, cut into 1/2-inch dice
  11. 16 oil-cured black olives, pitted and chopped
  12. 2 tablespoons chopped oregano
  13. 2 teaspoons chopped thyme
  14. 2 teaspoons chopped rosemary
  15. 1 bay leaf
  16. Salt and freshly ground pepper
  17. 16 lamb rib chops (3 1/4 pounds)
