Herb Roasted Salmon with Creole Vegetables

Ingredients

SALMON

  1. 1 tablespoon olive oil
  2. 1 small onion, minced
  3. 1 medium celery rib, minced
  4. 2 garlic cloves, minced
  5. One 2 1/2 -pound skinless salmon fillet
  6. 1/4 teaspoon freshly grated nutmeg
  7. Salt and freshly ground pepper
  8. 6 sage leaves
  9. Leaves from 1 large rosemary sprig

CREOLE VEGETABLES

  1. 1/4 cup plus 2 1/2 tablespoons olive oil
  2. 3 large sweet potatoes, peeled and cut into 1-inch chunks
  3. 5 garlic cloves, minced
  4. 2 shallots, minced
  5. 1 teaspoon thyme leaves
  6. 1/4 teaspoon freshly grated nutmeg
  7. Pinch of cayenne pepper
  8. Salt and freshly ground black pepper
  9. 1/2 pound small okra, halved lengthwise
  10. 1/2 pound shiitake mushrooms, stems discarded, caps halved
  11. 1/2 fresh cayenne chile or 1 jalapeño, seeded and minced
