Ingredients

  1. 1 cup all-purpose flour
  2. 1/2 cup coarse yellow cornmeal
  3. 1/2 cup fine white cornmeal
  4. Kosher salt and freshly ground pepper
  5. 2 large eggs, beaten
  6. 2/3 cup milk
  7. 8 skinless catfish fillets (5 ounces each)
  8. 1 cup mayonnaise
  9. 3 canned chipotle chiles in adobo, halved and seeded
  10. 2 tablespoons honey
  11. 2 tablespoons fresh lemon juice
  12. 1 1/2 cups vegetable oil, for frying
  13. 16 slices firm-textured white bread, toasted
  14. 1 head Boston lettuce, cut into 1/2-inch strips
  15. 2 large beefsteak tomatoes, thinly sliced
