  3. 5 pounds beef chuck steak with bone, cut into 8 portions
  4. Sea salt and freshly ground pepper
  5. 2 bottles dry red or white wine
  6. 24 shallots, quartered
  7. 4 carrots, quartered
  8. 2 large onions, quartered
  9. 1 large bunch of fresh parsley and several fresh bay leaves, tied together with string
  10. 2 whole star anise
  11. 1 teaspoon whole black peppercorns
