Pear Tart with Almond Cream

Ingredients

  1. 1 1/2 large egg yolks (1 1/2 tablespoons)
  2. 2 tablespoons sugar
  3. 1 tablespoon plus 1 teaspoon all-purpose flour
  4. Pinch of salt
  5. 1/2 cup milk
  6. 1/2 teaspoon pure vanilla extract

TART

  1. 1 disk Tart Dough
  2. 3 large ripe pears, such as Bartlett or Anjou
  3. 1/2 lemon
  4. 6 tablespoons unsalted butter, softened
  5. 2/3 cup confectioners' sugar, sifted
  6. 2/3 cup ground almonds (about 3 1/2 ounces)
  7. 1 tablespoon cornstarch
  8. 2 teaspoons white rum
  9. 1 egg, lightly beaten
  10. 1 tablespoon granulated sugar
