Lemony Semolina-Jam Cake

Ingredients

  1. 2/3 cup half-and-half
  2. 2 large egg yolks
  3. 2 tablespoons sugar
  4. 1 teaspoon all-purpose flour
  5. 4 teaspoons cornstarch
  6. Pinch of salt
  7. 2 teaspoons unsalted butter, softened
  8. 1/2teaspoon pure vanilla extract

CAKE

  1. 6 tablespoons unsalted butter, softened
  2. 1 teaspoon finely grated lemon zest
  3. 1 1/2 tablespoons fresh lemon juice
  4. 3/4cup plus 2 tablespoons sugar
  5. 3/4cup cake flour
  6. 1/4cup semolina
  7. 1 1/2 teaspoons baking powder
  8. 1/4teaspoon salt
  9. 4 large egg whites (1/2 cup)
  10. 1/4cup seedless raspberry preserves
  11. Confectioners' sugar and fresh raspberries, for serving
