Ingredients

  3. 1 teaspoon cinnamon
  4. 3/4 teaspoon finely grated lemon zest
  5. Pinch of salt
  6. 1 stick (4 ounces) plus 1 tablespoon unsalted butter, softened
  7. 1/2 cup coarsely chopped walnuts

BATTER

  1. 2 cups all-purpose flour
  2. 2 teaspoons baking powder
  3. 1/4 teaspoon ground ginger
  4. 1/4 teaspoon salt
  5. 1 1/2 sticks (6 ounces) unsalted butter, softened
  6. 1/2 cup sugar
  7. 1/4 cup honey
  8. 1 teaspoon finely grated lemon zest
  9. 1 teaspoon pure vanilla extract
  10. 2 large eggs
  11. 1/2 cup half-and-half
  12. 2 pounds Granny Smith apples--peeled, cored and cut into 1/2-inch dice
  13. Sweetened sour cream, for serving
