  1. 2 pounds all-butter puff pastry, thawed overnight in the refrigerator if frozen
  2. 4 medium Granny Smith or Golden Delicious apples--peeled, halved, cored and thinly sliced
  3. 1/4 cup sugar
  4. Cinnamon, for dusting
  5. Late Harvest Riesling Ice Cream
  6. 1 1/2 tablespoons finely chopped candied ginger
