  1. 2 cups whole blanched almonds (10 ounces)
  2. 3/4 cup all-purpose flour
  3. 2 1/2 teaspoons baking powder
  4. 1/2 teaspoon finely grated lemon zest
  5. Salt
  6. 1 1/2 cups granulated sugar
  7. 3 large carrots (10 ounces),
  8. coarsely chopped
  9. 4 large eggs, separated
  10. Confectioners' sugar, for dusting
