Ingredients

  1. 3 guajillo chiles, stems and seeds removed
  2. 1 ancho chile, stems and seeds removed
  3. Boiling water
  4. 1 small onion, unpeeled
  5. 2 garlic cloves, unpeeled
  6. 1 large, hard green tomato
  7. 3 large tomatillos, with husks
  8. 10 whole black peppercorns, ground
  9. 5 whole cloves, or 1/4 teaspoon ground cloves
  10. 2 tablespoons lard (preferably homemade), or vegetable oil
  11. Salt
  12. 2 tablespoons fresh masa or 2 teaspoons masa harina mixed with 2 tablespoons of water
