Ingredients

MARINATED CHICKEN

  1. 3 dried pasilla chiles (see Note)
  2. 2 dried guajillo chiles (see Note)
  3. 1 cup boiling water
  4. 4 large garlic cloves, halved
  5. 1 medium onion, coarsely chopped
  6. 3 tablespoons fresh lime juice
  7. 2 tablespoons olive oil
  8. Salt
  9. Eight 1/2-pound boneless chicken breast halves with wing drumettes attached
  10. Freshly ground pepper

SCOTCH BONNET SAUCE

  1. 1 yellow bell pepper
  2. 1 large yellow tomato
  3. 1 Scotch bonnet or habanero chile, seeded and coarsely chopped
  4. 1/4 cup vegetable or chicken stock or canned low-sodium chicken broth
  5. 2 tablespoons pure olive oil
  6. Salt
