Coq au Vin

Ingredients

  1. 10 whole chicken legs, cut into drumsticks and thighs
  2. 1 bottle dry red wine, preferably Burgundy
  3. 2 medium onions, coarsely chopped
  4. 2 carrots, coarsely chopped
  5. 1/2 cup Cognac or other brandy
  6. 2 tablespoons olive oil
  7. 2 garlic cloves, halved
  8. 10 whole black peppercorns
  9. Salt
  10. 2 1/2 cups dried porcini mushrooms (3 ounces)
  11. 4 cups boiling water
  12. 10 ounces slab bacon, sliced 1/4 inch thick, then cut crosswise into 1/2 -inch strips
  13. Freshly ground pepper
  14. 1/4 cup plus 2 tablespoons all-purpose flour
  15. 2 cups chicken stock or canned low-sodium broth
  16. 30 pearl onions
  17. 5 tablespoons unsalted butter
  18. 1 teaspoon sugar
  19. 1 pound white mushrooms, halved or quartered if large
  20. 1 tablespoon tomato paste
