  3. 2 tablespoons peanut oil
  4. 1/2 pound lean slab bacon, cut into 1 1/2-inch pieces
  5. 4 large garlic cloves, sliced 1/8 inch thick
  6. 1/2 pound skinless, boneless chicken breasts, cut into 1 1/2-inch pieces
  7. Salt and freshly ground pepper
  8. 1/2 pound white mushrooms, stems discarded, caps quartered
  9. 1/2 cup dry white wine
  10. 1 tablespoon soy sauce
  11. 2 scallions, cut into 1-inch lengths
