  3. Salt
  4. 1 1/3 cups cornmeal (about 7 ounces)
  5. 1/4 cup extra-virgin olive oil
  6. 6 ounces thickly sliced pancetta, cut into 1/4-inch dice (1 1/4 cups)
  7. 1 large onion, thinly sliced
  8. 2 large garlic cloves, thinly sliced
  9. 1/2 teaspoon crushed red pepper
  10. 2 pounds broccoli rabe, coarsely chopped
  11. Freshly ground pepper
  12. 1/2 cup freshly grated Pecorino Romano cheese (2 ounces)
