Ingredients

  1. 2 quarts water
  2. 4 medium zucchini (1 3/4 pounds)--halved lengthwise, seeded and cut into 2-inch pieces
  3. 1 small onion, coarsely chopped
  4. Salt
  5. 2 cups spinach leaves
  6. 2 tablespoons heavy cream
  7. 1 tablespoon fresh lemon juice
  8. 8 mint leaves
  9. Freshly ground pepper
  10. 8 large zucchini blossoms
  11. 4 ounces mild fresh goat cheese, at room temperature
  12. 1/4 cup tomato juice
  13. 1 tablespoon extra-virgin olive oil
  14. 1 cup finely diced yellow tomatoes
