Artichoke-Arugula Soufflé Squares

Ingredients

  1. 4 scallions, cut into thirds
  2. 3 garlic cloves
  3. 1 cup packed arugula leaves
  4. Two 6-ounce jars marinated artichoke hearts--drained, rinsed and patted dry
  5. 6 large eggs
  6. 1/2 teaspoon freshly grated nutmeg
  7. 1/4 teaspoon freshly ground pepper
  8. Tabasco sauce
  9. 1/2 pound sharp Cheddar cheese, shredded (2 cups)
  10. Coarse salt, for sprinkling (optional)
