Ingredients

GRAVLAX

  1. 3 cups kosher salt
  2. 1 1/4 cups packed light brown sugar
  3. 1/2 cup chopped fresh dill
  4. 3 tablespoons juniper berries, crushed
  5. 2 bay leaves
  6. 2 tablespoons black peppercorns
  7. One 1-pound arctic char fillet, skin on

SALAD

  1. 1 cup pecan halves (4 ounces)
  2. 2 tablespoons Champagne or white wine vinegar
  3. 1 tablespoon honey
  4. 1 tablespoon Dijon mustard
  5. 1/4 cup grapeseed oil
  6. 1 small garlic clove, minced
  7. 1 1/2 teaspoons finely chopped thyme
  8. Sea salt and freshly ground pepper
  9. 2 Granny Smith apples, cut into matchsticks
  10. 1 large Belgian endive, halved, cored and thinly sliced crosswise
