Ingredients

  1. 5cups chicken stock or canned low-sodium broth
  2. 2tablespoons unsalted butter
  3. 1/4 cup minced shallots
  4. 1 1/2 cups arborio rice (10 1/2 ounces)
  5. 1/2 cup freshly grated Parmesan cheese (2 ounces)
  6. Kosher salt and freshly ground pepper
  7. 2tablespoons finely chopped parsley
  8. 4large eggs
  9. 1/2 cup all-purpose flour
  10. 1cup fine dry bread crumbs
  11. 1 1/2 ounces mozzarella, cut into eighteen 1/2-inch dice
  12. 18fresh or frozen peas
  13. Vegetable oil, for frying
