Ingredients

  • 1 tablespoon unflavored gelatin, from 2 (1/4-ounce) packages
  • 3 cups clear apple juice
  • 2 tablespoons bottled horseradish (not drained)
  • 1/2 teaspoon salt
  • 1/2 medium fennel bulb (sometimes labeled 'anise') with fronds
  • 1 Granny Smith apple, cut into 1/4-inch dice
  • 1 teaspoon fresh lemon juice

    • Special equipment: 8 lightly oiled (1/2-cup) ramekins
