  • 1/2 cup semolina flour (pasta flour)*
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/3 cup (packed) golden brown sugar
  • 2 tablespoons honey
  • 1 teaspoon finely grated lemon peel
  • 1 large egg

  • Caramel-nut filling
    • 3/4 cup (packed) golden brown sugar
    • 1/4 cup sugar
    • 1/4 cup (1/2 stick) unsalted butter
    • 1/4 cup honey
    • 1/2 cup dried cherries
    • 1/2 cup coarsely chopped dried apricots
    • 1/2 cup whole almonds, toasted, coarsely chopped
    • 1/4 cup dried cranberries
    • 1/4 cup whipping cream
    • 1 (15-ounce) can apricot halves, drained, patted dry

    • 1 cup chilled whipping cream
    • 1 cup crème fraîche
